Just made some watermelon rind pickes yesterday from a similar recipe and am wondering -- did yours have any vegetal/ cabbage smell and taste to them? Please tell me if you remember anything like this!

Mine did, and I can't find other references to this. The texture, sweet-sourness, and appearance of the pickles is great, but that funky smell and taste is distracting. Did I do something wrong?

Thanks!

Years ago I made an attempt at making watermelon pickles and was left unimpressed. However, reading through this recipe makes me feel inspired. Just bought a good heavy melon, and it's a hot humid day.... looks like pickling weather to me!. Thanks for the inspiration.
